Yesterday flew by for us. Getting back into town we were non-stop getting things back to normal around here plus a plumber came out to fix a toilet and our broken garbage disposal. One great thing about renting is that these issues aren’t our issues. Madison had a little off day yesterday. Nothing that I did or aunty Michelle did would really please her. It was a rough day.
We had our second coaching call with our SOSL sisters yesterday! It was wonderful to chat with them and hear how they are seeing changes already in how they see and talk to themselves. We are excited for our next chat this weekend.
Michelle and I got to talking last night about how we haven’t made a new recipe yet in my new place and how excited we are to get back into the kitchen. We have a few new recipes ideas that we can’t wait to share with you. Our kitchen is all ready with no more boxes to unload or things to put away. It’s feeling like “my kitchen” now. It is smaller than my last kitchen so I had to donate some things that I really didn’t use anymore (which actually felt nice to get rid of and let someone else enjoy it). It’s always mentally nice for me to declutter, plus there was a lot of kitchen equipment and dishes that Michelle and I no longer used. So why keep it, right when someone else can use it?!?

It’s been awhile since we’ve shared a donut recipe so we thought what would be a better way to bring it back than with a carrot cake donut recipe!
We cheated a little in this recipe. We used pumpkin pie spice instead of using individual spices. We made these before we made the move out west so we made do with the spices on hand as we got rid of a lot of kitchen things.
Heck this makes the recipe that much easier, right?

We love baked donuts. This easy baked donut recipe is a perfect way to enjoy the classic carrot cake for breakfast with a warm cup of coffee.
Plus it only makes enough for 2 servings so no extra leftover donuts sitting around the house. These are best freshly made out of the oven.
These super easy baked donuts are secretly healthy (made with some of our favorite baking ingredients) and made with no added sugar! Then topped with a super simple creamy coconut butter frosting. YUM!
This recipe was inspired by our low sugar carrot cake and 3 ingredient baked donuts.
We have also made these donuts using plantain flour instead of whole plantains and they turned out great. They are a little more dense with plantain flour. It equaled about 3-4 tablespoons of plantain flour to the 6oz of real plantains.
You can use any flour for the tigernut flour.

Carrot Cake Baked Donuts
Ingredients
For the Baked Donuts:
6 oz (170 grams) peeled plantain, yellow-green one
4 tablespoons tigernut flour
1 teaspoon baking powder
2 tablespoons coconut oil, semi solid
1 tablespoon coconut flakes
2 tablespoons shredded carrot
1 1/4 teaspoon pumpkin pie spice
For the Coconut Frosting:
2 tablespoons coconut yogurt
1 tablespoon coconut butter
a few drops of stevia (optional)
Directions
- Peel a large plantain and should weigh around 6 ounces.
- Roughly chop plantain and place in blender. Pulse a little.
- Next add in remaining ingredients ending with the carrots.
- Continue to blend until combined.
- Lightly grease donut pan with coconut oil. Fill donut pan. Makes 2 large donuts.
- Bake at 350 degree for about 13 minutes.
- For the coconut frosting: Place all ingredients in a bowl and start to mix. Add in stevia to taste. Spread onto donuts.
